This afternoon I made coconut macaroons.
I drizzled chocolate glaze over some of them.
2 1/2 cups sweetened shredded coconut
1 tablespoon sugar
2 large egg whites
1 teaspoon pure vanilla extract
Pinch of salt
1. Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.
2. In a large bowl, combine all ingredients and mix well.
3. Form mixture into 1 1/2 tablespoon size mounds and place on prepared baking sheet, spacing about one inch apart.
4. Bake until golden brown, about 15-17 minutes.
